Mama's Pecan Pie

Ingredients
(preheat oven 350 degrees)
3 eggs
1 cup Karo dark or light corn syrup
1 cup sugar
2 Tablespoons margarine or butter- melted
1 teaspoon vanilla
1 1/2 cups pecans- whole, not chopped
1 unbaked 9 inch pie shell (above)- or purchase ready made in store- usually in cold section that has biscuit and cookie dough.
Directions
Mix all ingredients except pecans. Stir in pecans- pour into unbaked pie shell.
Bake 350 degrees 50-55 minutes or until knife inserted in middle comes out clean.
important to bake until completely done. if u need to bake a little longer, do so.
Cool and serve with whipped cream

Rainbow Cake in a Jar
Ingredients
1 box white cake mix
Neon Food coloring in pink, green, turquoise, purple
3 one-pint canning jars
1 can vanilla frosting
Rainbow sprinkles
Directions
Preheat oven to 350. Spray each jar with nonstick cooking spray.
Scoop about 1/2 cups of cake batter into five small bowls.
Tint each bowl with a different color until very vibrant
Spoon about 3 tablespoons of the purple batter into the bottom of each jar.
Spoon 3 tablespoons turquoise, then green, yellow and pink
Place the jars in a shallow baking dish
Add 1/4 water in baking dish
Place baking dish in oven and bake for 30-35 minutes.
Remove jars and allow to cool completely before adding frosting and sprinkles to the top.

Buttermilk Blueberry Cake
Ingredients
½ cup unsalted butter
1 cup sugar
1 egg
1 ts. vanilla
2 cups flour
2 tsp baking powder
1 tsp salt
2 cups fresh blueberries
½ cup buttermilk ( I used low fat cultured)
Ben & Jerry's Vanilla Bean ice cream
Directions:
Preheat the oven to 350.
Using a hand mixer combine the butter and sugar until light a fluffy. I softened the butter in the microwave for 10 seconds so it was easier to mix.
Mix in the egg and the vanilla until combined.
Now mix in the flour, baking powder, salt and buttermilk until all combined.
Lastly fold in the blueberries until its spread evenly in the batter.
Butter a 9 inch square baking pan. Coat the bottom of the pan with sugar
Spread the batter evenly in the pan and finish off with coating the top of the mixture with sugar.
Bake for 40 min.
Serve warm and with a side of vanilla bean ice cream.
